Yom Ha’Hatzmaut Chicken

Ingredients:
  • 4 whole boneless chicken cutlets
  • 1 tablespoon tomato paste
  • 1 can tomatoes
  • ½ onion, sliced
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 jalapeno pepper
  • ¼ teaspoon turmeric
  • ½ teaspoon paprika
  • 1 ½ teaspoons cumin
  • Salt and pepper
  • Pinch of cayenne
Instructions:
  • Sauté the chicken in some oil for 2-3 minutes.
  • Add the rest of the ingredients.
  • Cook covered 45 minutes to 1 hour on low.
  • May need to add water.
