Sheet Pan Chicken Fajitas
Ingredients:
- ¼ cup taco seasoning (see below)
- 1 tbsp olive oil
- 1 lime, juiced
- 2 lbs boneless skinless chicken breasts, cut into thin slices
- 1 red onion, sliced thin
- 1 red bell pepper, sliced thin
- 1 yellow bell pepper, sliced thin
- 1 green bell pepper, sliced thin
- Small flour tortillas, warmed, optional
- Taco seasoning
- 1 tablespoon chili powder
- 1 tablespoon smoked paprika
- 1 tablespoon ground cumin
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon dried oregano
- 1 tablespoon fine sea salt
- ½ tablespoon freshly cracked black pepper
Instructions:
- Make marinade using the taco seasoning, oil and lime.
- Toss the chicken, red onion and bell peppers together with the marinade. marinate, covered for 1 hour.
- Preheat oven to 375° f.
- Spread the chicken and vegetable mixture onto a rimmed sheet pan.
- Bake for 15-20 minutes, or until meat is cooked through.
