Sheet Pan Chicken Fajitas

Ingredients:
  • ¼ cup taco seasoning (see below)
  • 1 tbsp olive oil
  • 1 lime, juiced
  • 2 lbs boneless skinless chicken breasts, cut into thin slices
  • 1 red onion, sliced thin
  • 1 red bell pepper, sliced thin
  • 1 yellow bell pepper, sliced thin
  • 1 green bell pepper, sliced thin
  • Small flour tortillas, warmed, optional
  • Taco seasoning
  • 1 tablespoon chili powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon dried oregano
  • 1 tablespoon fine sea salt
  • ½ tablespoon freshly cracked black pepper
Instructions:
  • Make marinade using the taco seasoning, oil and lime.
  • Toss the chicken, red onion and bell peppers together with the marinade. marinate, covered for 1 hour.
  • Preheat oven to 375° f.
  • Spread the chicken and vegetable mixture onto a rimmed sheet pan.
  • Bake for 15-20 minutes, or until meat is cooked through.
