Baked Breaded Cod
Ingredients:
- ¼ cup mayo
- 2 tablespoons parmesan cheese
- 1 tablespoon lemon juice
- ½ teaspoon salt
- ½ teaspoon anchovy paste
- ¼ teaspoon black pepper
- ½ cup breadcrumbs
- 3 tablespoons flat leaf parsley, chopped
- 4 cod fillets (3 inch thick)
Instructions:
- Preheat oven to 450°f
- Combine may, parmesan, lemon, anchovy, salt, pepper
- Combine breadcrumbs and parsley
- Spoon mayo mixture on one side of cod and dip the coated side in the breadcrumb mixture. place fish on pan with crumb side up
- Bake 15-20 minutes until cooked through and bread crumbs begin to brown. serve with lemon wedges.
