Moroccan Fish Fillets

Ingredients:
  • ¼ cup olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic
  • 1 cup fresh parsley, chopped
  • Black pepper
  • 6 fish fillets (cod or tilapia)
  • ½ pound green olives
  • 1 red pepper
  • 3 plum tomatoes
  • 2 teaspoons paprika
  • Red pepper flakes
  • 1 cup water
Instructions:
  • Place fish in skillet with oil
  • Add all ingredients to fish and turn to coat
  • Bring to simmer, cover, cook for 25 minutes
