Moroccan Fish Fillets
Ingredients:- ¼ cup olive oil
- 1 medium onion, chopped
- 3 cloves garlic
- 1 cup fresh parsley, chopped
- Black pepper
- 6 fish fillets (cod or tilapia)
- ½ pound green olives
- 1 red pepper
- 3 plum tomatoes
- 2 teaspoons paprika
- Red pepper flakes
- 1 cup water
- Place fish in skillet with oil
- Add all ingredients to fish and turn to coat
- Bring to simmer, cover, cook for 25 minutes
