Chili Roasted Cod
Ingredients:
- Vegetable cooking spray
- 1 ½ cod fillets (¾ inch thick)
- ½ teaspoon chili powder
- ½ teaspoon oregano
- ½ teaspoon salt
- 2 tablespoons butter
- ½ teaspoon cumin
- Juice of 2 limes
Instructions:
- Heat oven to 450°f. coat pan with oil. add cod.
- Sprinkle cod with chili, oregano, salt.
- Roast 5-7 minutes until just opaque, and flakes with fork.
- Meanwhile, melt butter over low heat. cook, swirling constantly, just until butter begins to brown.
- Add cumin and lime and continue to cook, swirling 1 minute longer.
- Remove cod. drizzle the lime butter over the top.
