Chili Roasted Cod

Ingredients:
  • Vegetable cooking spray
  • 1 ½ cod fillets (¾ inch thick)
  • ½ teaspoon chili powder
  • ½ teaspoon oregano
  • ½ teaspoon salt
  • 2 tablespoons butter
  • ½ teaspoon cumin
  • Juice of 2 limes
Instructions:
  • Heat oven to 450°f. coat pan with oil. add cod.
  • Sprinkle cod with chili, oregano, salt.
  • Roast 5-7 minutes until just opaque, and flakes with fork.
  • Meanwhile, melt butter over low heat. cook, swirling constantly, just until butter begins to brown.
  • Add cumin and lime and continue to cook, swirling 1 minute longer.
  • Remove cod. drizzle the lime butter over the top.
