Turkey Bologna

Ingredients:
  • 2 lbs. turkey (ground, or not)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons salt (I used ½ teaspoon)
Instructions:
  • OIL the ham maker!
  • Process turkey in ½ pound increments in food processor
  • Bring large pot of water to simmer (185°F or 85°C)
  • I used the large pot and put in about 7 L water (AFTER putting ham maker in)
  • Once the water reaches 185°F or 85°C, turn burner to 2
  • Mix spices into meat (or into processor)
  • Press meat into ham maker
  • Place ham maker into hot water and leave for about 1½ - 2 hours
  • Remove when temperature is 165°F
  • (Or lower temperature, since it will continue to rise)
  • Allow to cool, then put in refrigerator overnight
  • Remove using cake spatula
  • Slice in meat slicer, then freeze.
