Turkey Bologna
Ingredients:- 2 lbs. turkey (ground, or not)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoons salt (I used ½ teaspoon)
- OIL the ham maker!
- Process turkey in ½ pound increments in food processor
- Bring large pot of water to simmer (185°F or 85°C)
- I used the large pot and put in about 7 L water (AFTER putting ham maker in)
- Once the water reaches 185°F or 85°C, turn burner to 2
- Mix spices into meat (or into processor)
- Press meat into ham maker
- Place ham maker into hot water and leave for about 1½ - 2 hours
- Remove when temperature is 165°F
- (Or lower temperature, since it will continue to rise)
- Allow to cool, then put in refrigerator overnight
- Remove using cake spatula
- Slice in meat slicer, then freeze.
