Amanita Muscaria

Ingredients:
  • 1 bag dried mushrooms (28.4 grams)
  • 1 full bottle RO water WITHOUT mineral filter! to start
  • ¼ teaspoon citric acid (I ended having to use 1⅛ teaspoons, probably due to mineralized RO water)
Instructions:
  • Place whole mushrooms into small part and add water
  • Boil, then simmer at burner 2 for 30 minutes (use spider to mix every 10 minutes)
  • Remove mushrooms with spider, and using strainer squeeze liquid back into pot
  • Add citric acid (hopefully, it will be below 4.00, ideally 2.5 - 3.0)
  • Stir well to dissolve, then remove 3 ounces, cool to below 50°C (takes about 15 minutes), then test with pH meter
  • Add more citric acid, dissolve, add back to pot, remove another 3 oz to test again
  • Keep repeating to keep pH between 2.5 and 3.0
  • Simmer for 3 hours, checking pH and amount of water left
  • Using coffee silicone strainer with CHEESECLOTH, strain liquid into 64 oz ball jar
  • Transfer little by little from jar to measuring cup
  • Transfer from cup to ice trays
  • Cool and freeze.
  • Each mushroom ice cube holds ABOUT 1 gram
