Roast Beef

Ingredients:
  • Roast (top round, bottom round, eye round)
  • 1 gram kosher salt per pound
  • onion powder
  • garlic powder
  • black pepper
  • olive oil
Instructions:
  • Rinse, pat dry
  • Coat with olive oil
  • Mix all spices and salt and coat roast on all sides
  • Place on RACK in pan
  • Insert meat thermometer
  • Bake at 250°F until temperature is at 125°F
  • Take out, let rest for 30 minutes, then refrigerate overnight
  • Slice using meat slicer
