Sausage and White Bean Soup

Ingredients:
  • 1 tablespoon olive oil
  • ¾ pound sweet or hot italian sausage
  • 1 medium onion, in medium slice
  • 1 ½ cans northern or other white beans
  • 2 cups chicken broth
Instructions:
  • Heat oil until hot. add sausages. cook, turning once or twice until well browned on all sides, about 5 minutes. remove from pan. cool, then cut into slices ¼ inch thick.
  • Add onions, cooking until well browned. in bowl, mash ½ can beans. add broth, mashed and whole beans and sausage. simmer, partially covered, 20 minutes. let stand 10 minutes.
